Kid-Approved Recipes for a Superfood Summer

Summer can be a double-edge sword for parents and caregivers. Sure, there's less of a grind, but less structure can mean less routine, and we all know where that leads: funky bed times, too much screen time, and always-snack-time.

We've compiled some of our favorite kid-approved summer recipes you can whip up for an easy breakfast or snack with little effort and ingredients. These mom-created, kid-approved recipes are proof that a summer treat doesn't have to be full of sugar and chemicals!

Superfood Nice Cream

Berry Nice Cream

Ingredients 

Tools 

  • Food processor or blender 
  • Spatula for scraping
  • Measuring cup 
  • Freezer-safe storage container w/ lid 

Directions 

  • Have your kitchen helper assist you in adding the smoothie kit, frozen banana halves, and milk to food processor.  
  • Pulse or blend until desired consistency is formed, stopping to scrape down the sides occasionally. Stopping for an occasional taste test is A-ok, too!
  • Consistency too thick? Add a splash of milk at a time. This is a great time to ask your child his/her opinion on the thickness, and if it is too thick, to come up with an idea on how to fix it. A science lesson made delicious!
  • Spoon and serve immediately or store in a freezer-safe container.  
  • Tips for serving: if your child is old enough, allow them to help scoop the ice cream into the cone. No cones? No problem! Scoop directly into a bowl.
  • Add an assortment of your favorite ice cream toppings in small bowls and allow the littles to customize their "nice" cream creations! 

    

Vegan Superfood Fudgesicles

Ingredients

Tools

  • Blender
  • Measuring cup 
  • Spatula for scraping
  • Popsicle mold 

Instructions

  • Have your tiny helper add an Everipe Smoothie Kit and can of coconut milk to blender. 
  • Blend for 60 seconds. Plug ears if necessary. 
  • Adult job: pour into popsicle mold.
  • Freeze for at least 4 hours or overnight. A great lesson in patience--and science! 

Superfood Chia Pudding

Ingredients

Tools

  • Blender
  • Spatula for scraping
  • measuring cup
  • Airtight container

Instructions

  • Blend 1 cup of milk with 1 Everipe Smoothie Kit 
  • Put 1/4C of chia seeds and blended smoothie into an airtight container. 
  • Give it a good shake and let it set up overnight. 
  • Enjoy as-is or add toppings like fruits, coconut flakes, seeds, or nut butter. 

 

Superfood Cereal

Ingredients

  • Everipe Smoothie Kit (Suggested: Strawberry Bananza)
  • Preferred cereal 
  • Preferred milk 
  • Toppings (heart-shaped strawberries optional!) 

Instructions

  • Pour milk and cereal as you normally would 
  • Add a sprinkle of the freeze dried fruits and superfoods from an Everipe Smoothie Kit.
  • Watch the milk turn color (the all natural way!) and enjoy!
